Ingredients
  • 2 Pork shoulder steaks
  • Salt to taste
  • Freshly ground black pepper
  • ½ cup (125 ml) BBQ sauce
  • ¼ cup (62.5 ml) butter, softened
  • 2 tbsp. honey
  • Optional sliced hot peppers
Method
  1. 40 minutes to 24 hours before you begin cooking, season the pork thoroughly, on all sides, with salt. Place it onto a rack over a rimmed baking sheet and allow the pork steaks to dry brine.
  2. In a bowl, combine the honey and butter. Optionally, add some hot peppers in there too. Once nicely mixed, you can wrap the honey butter into cling-wrap in a cigar shape, or leave it in the bowl, and put it into the fridge until needed.
  3. Preheat your grill to 400°F+ (200°C+), preparing a two-zone fire where half of the grill is on, and the other half is off. Alternatively, raise the grids to the upper position, then ignite your infrared side burner to high. Light the main cooking grids under the lid, preparing for indirect grilling, and setting the BBQ to low.
  4. Season the pork shoulder steaks with freshly ground black pepper and then sear them over direct heat. Flip them frequently, allowing sear marks to form.
    PRO TIP: To ensure you get the perfect finished temperature of 145°F (63°C), use a meat thermometer to monitor how your cook is going.
  5. Once you have great sear marks, you can start basting your pork shoulder steaks with a light coating of BBQ sauce, allowing it to caramelize a little before flipping and brushing the other side. If your pork is getting too hot, too fast, move it off direct heat to finish cooking.
  6. Remove the pork from the grill when it reaches about 140°F (60°C). Place it on a platter or board to rest and finish coming up to temperature. Top your saucy pork steaks with some of the honey butter while it rests.
  7. Serve these with your favorite seasonal sides. Try roast or mashed potatoes, potato salad, and your favorite vegetables or a salad.
  8. Pair this delicious and easy meal with a hazy IPA that is bright and smooth. Instead of beer, try a wine pairing like a dark fruit or berry-forward Pinot Noir.
